This recipe has been a favorite of our for years. Venison is a rich meat with full flavor and is best served hot. Blending Venison with bacon and seasonings brings out the best in both meats for a winning combination.

The second reason pressure cleaning is important is the mold and mildew. Keep in mind that just because you can’t see it, doesn’t mean it’s not there. Mold and mildew spores can be in the wood, even when you cannot physically see it. If the logs are not cleaned properly, with the stain manufacturer’s recommended cleaning procedures, the mold and mildew can continue to grow, even after the stain has been applied. This can lead to stain failure, which can lead to having to strip or blast the logs and start from scratch again.
The image above shows the Venison chopped into bite sized pieces and seasoned with Weber Steak Seasoning. Sprinkle a little bit of olive oil on the pan or you can use foil (as seen here) or parchment paper as a layer on the pan to make sure the meat does not stick to the pan, for a less mess experience. Be sure each piece of Venison is covered well with seasoning.

In the above image we have wrapped each piece of venison in bacon and have used a toothpick to hold the bacon to the Venison pieces. Now you are ready to bake your Smoked Venison Bacon Bites.
Slice the whole pack of bacon in half and wrap a half slice of bacon around each venison cube. Secure with toothpick.Heat your smoker to 225 / 250. Once heated, put venison cubes in smoker and cook for 2 hrs or until venison is still a little pink inside.Once finished, they can be served warm or cold. But for the best flavor, serve hot and fresh from the smoker!
